50g salad leaves
30g tomato, sliced

1. Put the pitta into the toaster for 30 second or so to warm through
2. Cut the pitta in half and open up the pocket and spread with the avocado. Stuff with the leaves and tomato.

1. Lightly toast the muffin and then top with the mozzarella. Finish under the grill until the cheese melts.

Cheese & Mushroom Omelette

20g cheddar (or other cheese)
3 mushrooms, sliced
½ tsp oil

1. Heat the oil in a non-stick frying pan and fry the sliced mushrooms.
2. Once browned whisk the egg and pour into the pan, swirling the pan so the egg covers the bottom.
3. Once the egg starts to solidify, grate the cheese over half of it and fold the other half of the omelette over. Cook for another minute or two.
