1 tin mackerel in brine
1 spring onion, finely sliced
1 tsp Dijon mustard
1 tbsp plain fat-free Greek yogurt
To serve:
1 oatcake
Serves 4
1. Drain the mackerel and add to a small bowl with the mustard, spring onions and yogurt.
2. Mash everything together.
3. Divide into four portions and keep three in the fridge for up to 3 days. Serve each portion with an oatcake.

60g cucumber
60g smoked salmon
1 tsp horseradish sauce
1tsp fat-free plain Greek yogurt
Serves 1
1. Mix together the horseradish and yogurt and spread it onto the smoked salmon slices.
2. Cut the cucumber into batons and wrap the salmon around them.

Warmed Honey Peach

½ tsp honey
pinch cinnamon
30g Plain fat-free Greek yogurt
Serves 1
1. Cut peach in half and scoop out the stone.
2. Put the halves cut-side up on a plate and sprinkle over the cinnamon and drizzle over the honey.
3. Microwave for 1 minute until peach is warm.
4. Top with yogurt and serve
