Ingredients
1 tin kidney or black beans, drained,
225g cooked quinoa,
½ onion chopped,
1 clove garlic,
2 tbsp soy sauce,
1 egg, ½ slice bread (torn),
1 tsp olive oil (for frying),
1 burger bun,
1 tbsp light mayonnaise,
10g slice of cheese, 160g salad, 1 tsp olive oil
1. In a large bowl, mash the drained kidney or black beans with a fork until mostly smooth.
2. Add the cooked quinoa, chopped onion, minced garlic, soy sauce, egg, torn bread, and olive oil to the mashed beans. Mix until well combined.
3. Divide the mixture into equal portions and shape each portion into a burger patty.
4. Heat a little olive oil in a frying pan over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
5. Serve each burger in a bun with a tablespoon of light mayonnaise, a slice of cheese, and a side of salad drizzled with olive oil.
