Cod with Green Olives & Mash
200g cod fillet, 200g potatoes, 2 tbsp green olives, 1 tbsp olive oil, 1 tbsp milk, 80g green beans, 80g broccoli
1. Begin by peeling and chopping the potatoes into even-sized chunks
2. Place the potatoes in a pot of boiling water and cook for about 15 minutes or until tender
3. While the potatoes are cooking, heat the olive oil in a frying pan over medium heat
4. Add the cod fillet to the pan and cook for 4-5 minutes on each side until golden and cooked through
5. In the last few minutes of cooking, add the green beans and broccoli to the pot with the potatoes
6. Once the vegetables are tender, drain them and mash together with the milk and a pinch of salt
7. Serve the cod on a plate alongside the mash and top with the green olives
